There is a quiet magic in the kitchen at spiilled when the aroma of brown butter mingles with the earthy scent of fresh sage. Preparing these Brown Butter Sage Salted Honey Milk Buns is like a warm embrace, transforming simple ingredients into a delightful treat. Kneading the dough and watching it rise takes me back to cherished moments sharing meals with loved ones.

Browning the butter is key; it develops deep, nutty flavors that make these milk buns unforgettable.

Ingredients in Brown Butter Sage Salted Honey Milk Buns

  • Unsalted Butter: This is where our journey begins, setting the stage for a rich, nutty flavor hit, thanks to the browning process.
  • Fresh Sage: Earthy and aromatic, fresh sage adds warmth and a lovely herbal note to our buns.
  • Whole Milk: Lends moisture and tenderness to the dough, resulting in that characteristic pillowy-soft texture.
  • Granulated Cane Sugar: A hint of sweetness to balance the savory elements, helping to activate the yeast, too.
  • Active Dry Yeast: The magical ingredient that makes the dough rise, creating that light, airy bun texture.
  • Sweetened Condensed Milk: Adds luxurious richness and sweetness, making the buns delightfully soft and slightly caramelized.
  • Egg: Acts as a natural binder, giving the dough its structure and golden color.
  • Honey: A natural sweetener that pairs beautifully with the sage, offering depth and a touch of floral sweetness.
  • Fine Baking Salt: Enhances the flavors, balancing sweetness and providing that savory pop we all crave.
  • All Purpose Flour: The backbone of our dough, providing structure and just the right amount of chewiness.
  • Key Technique: Browned Butter: By browning the unsalted butter with fresh sage, we unlock a deep, nutty aroma and flavor that make these buns truly memorable.
  • Unsalted Butter (For Honey Butter): The base for our honey butter, creamy and perfect for spreading.
  • Honey (For Honey Butter): Adds a sweet, sticky contrast to the savory notes of the buns.
  • Salt (For Honey Butter): Balances the sweetness of the honey butter, enhancing all the flavors.
  • Flaky Salt: A sprinkle of this on top of the buns gives a delightful crunch and burst of flavor with every bite.

Let’s Make Brown Butter Sage Salted Honey Milk Buns!

Nothing warms my kitchen like the aroma of these buns coming to life. Over 140 minutes, these delightful bread creations transform with such grace. Let’s dive into this culinary adventure!

  1. Brown the Butter: In a saucepan over medium heat, melt 4 tablespoons of unsalted butter. Add 2 tablespoons of freshly chopped sage. Stir consistently until brown specks form at the bottom and you catch the nutty, fragrant aroma. Remove from heat and let it cool to room temperature.
  1. Warm the Milk: Heat 1/2 cup of whole milk until just warm to the touch, around 30 seconds. It should be comforting, not scalding. Once ready, pour it into a mixing bowl.
  2. Activate the Yeast: Add 2 tablespoons of granulated cane sugar and 2 teaspoons of active dry yeast into the warm milk. Give it a gentle stir, then leave it for 5-10 minutes. You’ll see it transform into a foamy, yeasty bloom.
  3. Strain and Mix: Strain the chopped sage from the browned butter (or keep it for added flavor), then pour the butter into the mixing bowl. Incorporate 1/4 cup sweetened condensed milk, 1 tablespoon honey, 1 large egg, and 1 teaspoon of fine baking salt. Mix until everything blends together, about 1 minute.
  4. Form the Dough: Gradually add 1 1/2 cups of all-purpose flour, knead until absorbed. Continue with another 1/2 cup, kneading for several minutes until the dough is smooth and pliable, adapting based on the day’s weather and your flour’s texture.
  5. First Rise: Transfer the dough to a greased large bowl, cover tightly with plastic wrap, and let it rise in a warm spot for about 1 hour or until it doubles in size. Feel the dough’s calm rise as a gentle process, filled with promise.
  6. Shape the Buns: Once risen, gently punch down the dough. Divide into 8 equally-sized portions, rolling each into a firm ball. Arrange these in a 9-inch pie plate greased with softened butter. Cover again and allow them a warm spot to rise for another 40-60 minutes.

Creative Twists on Brown Butter Sage Salted Honey Milk Buns

There’s always room for a little experimentation in the kitchen, right? Let’s explore how to put a unique spin on these buns while sticking to the essence of the original recipe. Here are a few variations to try:

  • Quick Rise Yeast: If you’re short on time, substitute active dry yeast with instant yeast. You’ll just need to slightly reduce the rising times, keeping the process swift and efficient without compromising on fluffiness.
  • Tropical Twist: For a subtle hint of the tropics, use coconut milk or cream instead of sweetened condensed milk. It lends a gentle, creamy richness that pairs wonderfully with the nutty brown butter and savory sage.
  • Milk Simplicity: Want to keep things a bit simpler? You can omit the sweetened condensed milk and instead gradually add up to 3 tablespoons more whole milk. This creates a softer dough while maintaining that lovely, airy texture.

Feel free to get creative while you knead your way to deliciousness! Remember, cooking is all about enjoying the journey as much as the destination.

Keeping the Magic Alive

To savor your Brown Butter Sage Salted Honey Milk Buns for days, let them cool completely before sealing to prevent them from becoming soggy. Store any leftovers in an airtight container at room temperature for up to two days; they maintain their delightful texture without needing refrigeration. If you want to keep them longer, they freeze beautifully! Just pop them into a freezer bag after cooling. They’ll stay fresh for up to a month in the freezer.

When the craving strikes, gently reheat the buns in the oven to rekindle their fresh-from-the-oven warmth. Preheat your oven to 300°F, wrap the buns in foil to keep them moist, and heat them for about 10 minutes. This little extra step ensures they remain soft, just like when they first emerged from the oven, ready to be devoured with that luscious honey butter.

Ingredients

For the Milk Buns:
  • 4 tbsp. Unsalted Butter
  • 2 tbsp. Fresh Sage chopped + more for baking
  • 1/2 cup Whole Milk
  • 2 tbsp. Granulated Cane Sugar
  • 2 tsp. Active Dry Yeast
  • 1/4 cup Sweetened Condensed Milk
  • 1 large Egg
  • 1 tbsp. Honey
  • 1 tsp. Fine Baking Salt
  • 2 1/2 cups All Purpose Flour
  • Flaky Salt for garnishing
For the Honey Butter:
  • 1/2 cup 1 stick Unsalted Butter, Room Temperature
  • 1/3 cup Honey or to taste
  • Salt to taste

Method

  1. In a saucepan over medium heat, add the butter. Once melted, add the freshly chopped sage. Stir until browned, brown specks will form at the bottom and it will smell nutty. Remove from heat to cool to room temperature.
  2. Heat up the milk just until warm to touch, about 30 seconds. If it's too hot or steamy, let cool off until room temperature. If using a stand mixer fitted with the hook attachment, add to its bowl. Otherwise, add to a large mixing bowl.
  3. Add the sugar and active dry yeast to the warmed milk, lightly mix, then let sit for 5-10 minutes, until super foamy.
  4. Use a fine mesh strainer to remove the chopped sage, pour the brown butter into the mixing bowl. If desired, you can skip this step and just add both the brown butter and sage into the dough.
  5. Add the sweetened condensed milk, honey, egg, and salt. Mix until smooth, about 1 minute.
  6. Add 1 1/2 cups flour and knead until fully absorbed. Continue adding 1/2 cup flour, kneading for a few minutes afterwards, until a smooth and pliable dough. Depending on weather and type of flour used, you may need less.
  7. Transfer to a large bowl greased with olive oil. Cover with Saran Wrap, then set aside in a warm environment for 1 hour, or until doubled in size. I recommend wrapping tightly in Saran Wrap and placing in the oven to help it rise.
  8. TIP: During colder months, I recommend wrapping tightly with saran wrap and placing in the oven at 80-100F for 10 minutes, then turn OFF to finish rising.
  9. Punch out the air in the risen dough, then transfer onto a clean surface to divide into 8 equally-sized pieces.
  10. Roll into tight balls, then place in a 9" pie plate greased with softened butter. Cover once more with Saran Wrap to rise in a warm environment, such as the oven turned OFF with light ON, for 40-60 minutes, until doubled in size. Remove before preheating the oven.
  11. TIP: During colder months, I recommend wrapping tightly with saran wrap and placing in the oven at 80-100F for 10 minutes, then turn OFF to finish rising.
  12. Preheat oven to 350F.
  13. Brush the tops of the milk buns with extra whole milk. If desired, press a sage leaf onto each milk bun and sprinkle with flaky salt.
  14. Bake on the middle rack for 18-22 minutes, until the tops are deeply golden brown. Let cool at least 15 minutes before enjoying warm with the honey butter!
  15. Beat all ingredients in a stand mixer with the whisk attachment until light and fluffy. Place in a serving dish to enjoy.

Notes

The process of browning the butter is crucial; it develops deep, nutty flavors that elevate the entire dish. This Maillard reaction not only enhances the taste but also adds complexity, making these milk buns unforgettable.
