Crafting Your Browned Butter Pumpkin Oatmeal Cookies

In just 45 minutes, you can transform a few humble ingredients into a batch of cookies that warm the soul. Let’s dive into this comforting autumnal creation that’s perfect for those cozy afternoons with friends.

  1. Prepare Baking Sheets:
Line two large baking sheets with parchment paper or silicone baking mats. Set these aside as your canvas awaits these incredible creations.
  2. Dry the Pumpkin:
Line a medium bowl with two paper towels. Place the pumpkin puree inside and use another paper towel to press down, blotting excess moisture. This ensures our cookies have the ideal texture. Set the pumpkin aside.
  3. Brown the Butter:
Slice the butter and melt it in a medium skillet over medium heat. Swirl the pan until the butter foams and turns golden brown with nutty aromas filling the air. Be sure to watch for those little brown bits—they’re flavor gold! Cool the browned butter in a medium mixing bowl in the refrigerator for 10 minutes.
  4. Combine Dry Ingredients:
In a separate bowl, whisk together oats, flour, baking soda, salt, cinnamon, and pumpkin pie spice. This dry blend will soon meet our luscious, cooled brown butter.
  5. Mix Wet Ingredients:
In a large bowl, whisk the cooled browned butter with granulated and brown sugars until smooth. Stir in the egg yolk and vanilla, followed by the blotted pumpkin, creating a velvety base for your dough.
  6. Form the Dough:
Gradually incorporate the dry ingredients into the wet mixture, gently mixing until combined. The dough should be soft and sticky, inviting you to create.
  7. Shape the Cookies:
Using a medium cookie scoop, form dough balls of about 2 heaping tablespoons. Place them 2-3 inches apart on prepared baking sheets. Gently flatten each ball with your palm.
  8. Bake to Perfection:
Bake at 350°F for 14–15 minutes, until lightly browned and set at the edges. The cookies should have a hint of crispness and a chewy center. Allow them to cool on the sheet for a few minutes, then transfer to a rack.
  9. Make Brown Butter Icing:
In a small bowl, stir the reserved 1/4 cup brown butter (warm slightly if needed). Whisk in confectioners’ sugar, milk, and vanilla until smooth. Dip each cooled cookie top in this rich, aromatic icing.

Exploring Creative Cookie Techniques

There’s nothing like the satisfaction of mastering a recipe and then finding ways to make it truly your own. Let’s dive into a few technique-focused tips to make these Browned Butter Pumpkin Oatmeal Cookies shine in your own kitchen.

  • Browning Mastery: Ensure the butter is perfectly browned to unlock its full nutty potential. Keep your eyes on the prize (and pan), swirling gently as it foams, and watch for the moment it turns a rich amber. That’s when magic happens!
  • Pumpkin Prep Tip: To avoid overly wet cookie dough, blotting the pumpkin puree well is key. Don’t rush this step; the drier the puree, the chewier the cookie. Take your time with the paper towels—it’s worth it.
  • Cooling Technique: Let the browned butter cool enough but not too much before incorporating it into the dough. Ten minutes in the fridge should do the trick, giving you a creamy, integrated texture in each delightful bite.
  • Icing Touch: If your brown butter icing seems thick after cooling, just a gentle rewarm can make it silky smooth again. This ensures an even coat on each cookie.

These little tricks are about letting the ingredients shine, crafting cookies that taste like the essence of fall.

Keeping the Magic Alive

Once you’ve tried these Browned Butter Pumpkin Oatmeal Cookies, you might find yourself wanting to save a few for later (if you can resist!). To keep them fresh, store the cookies in an airtight container at room temperature for up to a week. Make sure they’re completely cooled before sealing them away; this helps maintain their texture. If you’re thinking about freezing them, they freeze beautifully for up to three months. Just layer them with parchment paper to prevent sticking.

When you’re ready to enjoy them again, a quick reheat works wonders. Simply pop a cookie into the microwave for about 10 seconds—it’s just enough to warm them up without drying them out. If you prefer a more oven-fresh experience, you can also place them in a preheated oven at 300°F for a few minutes. This brings back that just-baked warmth, making each bite as magical as the first time.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice*
  • 1 cup granulated sugar
  • 2/3 cup packed light or dark brown sugar
  • 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
Brown Butter Icing
  • 1/4 cup butter
  • 1 1/2 cups confectioners’ sugar
  • 3 tablespoons milk
  • 1/4 teaspoon pure vanilla extract

Method

  1. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. Line a medium bowl with two paper towels. Place the pumpkin puree in the bowl, then use another paper towel and press down to blot excess moisture out of the pumpkin. Set aside.
  3. Cut the butter into small pieces for even melting. Melt the butter in a medium skillet over medium heat. Swirling the pan a few times as the butter melts. Once it’s melted, watch carefully, until butter foams and turns a golden brown color (little brown bits will start to form around the sides and bottom of pan), continue stirring/swirling the pan to prevent it from burning.
  4. Once the butter turns that golden brown color, remove from the heat and immediately transfer the butter to medium size mixing bowl and put in the refrigerator for 10 minutes to cool slightly.
  5. In a medium bowl, whisk together the oats, flour, baking soda, salt, cinnamon, and pumpkin pie spice.
  6. In a large bowl, whisk together one cup of the the cooled browned butter and both sugars until combined. Add in egg yolk and vanilla and whisk until combined. Next whisk in the blotted pumpkin. Add the dry ingredients and gently mix until combined. The cookie dough will be soft and sticky.
  7. Using a medium cookie scoop, scoop cookie dough into balls (about 2 heaping tablespoons), place 2-3 inches apart on the cookie sheet. Using the palm of your hand, slightly flatten the balls out.
  8. Bake at 350° for 14–15 minutes or until lightly browned and set on the edges. Remove cookies from the oven and allow to cool on the cookie sheet for a few minutes before transferring to a cooling rack.
  9. Once the cookies are cooled, dip each cookie in the browned butter icing.
  10. In a small bowl add the reserved 1/4 cup of brown butter (give it a stir and if it has started to firm up, warm it up slightly on the stove or in the microwave).  **If you didn’t already brown the butter,  do so now and let it cool slightly.
  11. Whisk in the powdered sugar, milk and vanilla. Continue whisking until smooth. Dip the tops of the cookies in the icing.

Notes

The key technique in this recipe is browning the butter, which adds a rich, nutty flavor that elevates the cookies from ordinary to extraordinary. The Maillard reaction that occurs during browning deepens the flavor profile, making each bite a deliciously complex experience.
