Ingredients

  • 2 chicken breasts
  • Salt and pepper, to taste
  • 1 cup chicken bone broth (optional for Instant Pot)
  • 2 tbsp ghee (substitute oil or butter)
  • 1/2 cup buffalo sauce
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1 medium diced onion
  • 2 cloves garlic, minced
  • 1/4 cup sliced green onions
  • 1/2 cup blue cheese
  • 1 cup shredded cheese of choice (e.g., Monterey Jack with hatch chili)
  • 1 package store-bought pizza dough (or gluten-free alternative)
  • Ranch dressing, for serving

Method

  1. Prep the Instant Pot shredded chicken by placing the chicken breasts in the pot; season with salt, pepper, and garlic powder. Add the chicken bone broth, seal the pot, and set to poultry setting for 15 minutes. Release pressure naturally and shred the chicken with two forks.
  2. In a large pan on medium-high heat, melt ghee. Add diced onions, celery, carrots, salt, and pepper; sauté for 5 minutes.
  3. Add shredded chicken, buffalo sauce, and green onions to the pan and sauté for another 5 minutes.
  4. Cut the pizza dough in half, then slice each half into 6 even pieces. Press each piece into a skull baking pan mold.
  5. Fill each dough piece with about 1/3 cup of buffalo chicken stuffing. Top with blue cheese and shredded cheese, and fold over the dough to create a seal.
  6. Bake at 350°F for 18-20 minutes or until golden brown.
  7. Carefully remove from the baking tin, transfer to a serving platter, and serve with ranch dressing, celery sticks, and carrots.

Notes

The use of ghee instead of regular oil or butter adds a rich, nutty flavor and enhances the overall depth of the dish. Ghee has a higher smoke point and is more stable for cooking at medium-high heat, allowing the vegetables and chicken to sauté perfectly without burning.
