Ingredients

Ingredients 1x2x3x
  • ▢ 1 Sourdough Baguette
  • ▢ 3-4 ripe tomatoes, diced
  • ▢ 2 tablespoon Extra Vigin Olive olive, plus more for brushing
  • ▢ 1 tbsp red wine vinegar
  • ▢ 2 tablespoon Balsamic Vinegar
  • ▢ 2 cloves garlic, minced plus 1 extra clove for rubbing bread
  • ▢ Balsamic Glaze for making ghost eyes
  • ▢ Fresh basil leaves, chopped
  • ▢ 1 teaspoon freshly ground black pepper
  • ▢ 1 teaspoon Himalayan sea-salt
  • ▢ Sliced Mozarella

Method

  1. Preheat oven to 350-degrees and diced the tomatoes, basil, and mince the garlic. Set aside. Prepare a lined baking sheet. Unlined is fine too!
  2. Slice the sourdough baguette and place on a baking sheet. Brush each slice with Extra Virgin Olive Oil and rub with a clove of garlic. This brings out the most flavor! Toast the baguette slices for 5-10 minutes until crispy.
  3. In a bowl, combine the diced tomatoes, olive oil, balsamic vinegar, red wine vinegar, black pepper, and sea-salt, and mix until combined. Add the minced garlic and fresh chopped basil, and mix again until combined. Set aside and let the flavors meld together.
  4. Slice the mozzarella cheese into thick slices and use the Halloween cookie cutters to make your Halloween shapes.
  5. Spoon the prepared bruschetta tomato mixture over each toasted bread slice.
  6. Top with your Mozzarella ghosts and make the eyes using the Balsamic Glaze, gently dot circles for the eyeballs and ghost face. Eat immediately and enjoy!

Notes

Brushing the sourdough baguette slices with Extra Virgin Olive Oil before toasting not only enhances the flavor but also creates a beautifully crispy texture. This crucial step allows the bread to develop a golden crust while keeping the inside soft, providing the ideal base for the vibrant toppings.
