Soft & Thick Peanut Butter Cookies

There’s something so comforting about the aroma of peanut butter cookies wafting through my kitchen at spiilled. As I measure out each ingredient—flour, butter, and creamy peanut butter—I’m taken back to cozy evenings with friends, savoring these soft and thick delights straight from the oven. It’s not just about the taste; it’s about the memories they create, turning an ordinary day into something special.

Chilling the dough is key. It allows the fats to solidify, ensuring chewy centers and set edges. This simple technique turns everyday ingredients into an unforgettable treat.

What Makes These Soft & Thick Peanut Butter Cookies So Special?

  • All-Purpose Flour: Provides structure, creating the perfect base for a soft, thick texture.
  • Baking Soda: Helps the cookies rise just the right amount, resulting in a tender crumb.
  • Salt: Balances the sweetness and nuttiness of the peanut butter.
  • Unsalted Butter: Smooth and creamy, blending beautifully with the sugars for that melt-in-your-mouth feel.
  • Brown Sugar: Adds depth and a rich, caramelized flavor.
  • Granulated Sugar: Provides sweetness and assists in caramelizing the edges.
  • Egg: Adds moisture and richness, helping to bind everything together.
  • Creamy Peanut Butter: The star, offering a robust peanut flavor with each bite.
  • Pure Vanilla Extract: Adds warmth and aromatic richness.
  • Key Technique: Chilling the Dough: Keeps the cookies thick with chewy centers.
  • Extra Granulated Sugar for Rolling: Creates a crunchy coating that contrasts with the soft interior.

The result? A cookie that’s pure peanut buttery goodness. Whether you’re curled up with a book or sharing with friends, these cookies are sure to please!

Let’s Bake Soft & Thick Peanut Butter Cookies!

In just under two hours, these peanut butter cookies are more than a treat—they’re a journey back to warm, heartwarming moments. Let’s dive in!

  1. Mix Dry Ingredients:
Whisk together 1 and 1/3 cups of all-purpose flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt in a medium bowl. Achieve a uniform texture, then set aside.
  2. Cream Butter and Sugar:
In your mixer, beat 1/2 cup of softened unsalted butter on high speed for a minute until creamy. Turn down to medium-high and add 1/2 cup packed brown sugar and 1/4 cup of granulated sugar. Beat for about 3 minutes until smooth.
  3. Incorporate Wet Ingredients:
Add one room-temperature egg, blending well. Don’t forget to scrape down the bowl. Add 3/4 cup of creamy peanut butter and 1 teaspoon of vanilla extract. Beat until well combined.
  4. Combine Wet and Dry:
Add the dry ingredients to the wet mixture. Blend on low speed until the dough is soft and creamy.
  5. Chill the Dough:
Wrap the dough and chill in the refrigerator for at least 1–2 hours. Patience here will make those thick, chewy centers possible.
  6. Preheat and Prep:
Preheat your oven to 350°F (177°C), and line your baking sheets with parchment paper.
  7. Roll and Shape:
Pour 1/2 cup of granulated sugar into a bowl. Shape the chilled dough into balls using about 1 tablespoon for each. Roll in sugar and arrange on the sheets, spaced 2 inches apart. Use a fork to make criss-cross indents, then reshape into thicker discs.
  8. Bake to Perfection:
Bake the cookies for 11–12 minutes. You’ll know they’re done when the edges are set and lightly browned.
  9. Cool and Enjoy:
Let them cool on the baking sheet for 5 minutes before transferring to a wire rack. The cookies will continue to set as they cool.

There you have it—your batch of soft and thick peanut butter wonders. They offer a warm, nostalgic experience that’s a joy to share!

Soft & Thick Peanut Butter Cookies

These are the softest, thickest peanut butter cookies! You need just 9 ingredients for the base recipe, and it can be adapted in so many ways to make different variations (see post above).
Prep Time 1 minute
Cook Time 12 minutes
Total Time 1 minute
Servings: 32

Ingredients

Ingredients
  • 1 and 1/3 cups (170g) all-purpose flour (spooned & leveled)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar, plus 1/2 cup (100g) for rolling
  • 1 large egg, at room temperature
  • 3/4 cup (about 185g) creamy peanut butter (see note)
  • 1 teaspoon pure vanilla extract

Method

  1. Whisk the flour, baking soda, and salt together in a medium bowl. Set aside.
  2. Using a hand mixer or a stand mixer fitted with paddle attachment, beat the butter for 1 minute on high speed until creamy. Switch to medium-high speed and beat in the brown sugar and 1/4 cup (50g) granulated sugar until completely creamed and smooth, about 3 minutes. (Here’s a helpful tutorial if you need guidance on how to cream butter and sugar.) Add the egg and beat until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the peanut butter and vanilla extract and beat until combined.
  3. Add the dry ingredients to the wet ingredients and beat on low speed until combined. The dough will be very creamy and soft. Cover and chill the cookie dough in the refrigerator for at least 1–2 hours, and up to 3 days.
  4. Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats.
  5. Place remaining 1/2 cup (100g) of sugar into a bowl. Roll chilled cookie dough into balls, about 1 scant Tablespoon (5/8 ounce or 18g) of dough each. Roll each ball in the sugar and arrange on baking sheets about 2 inches apart. Use a fork to make a criss-cross indent on top of each. To prevent the cookies from over-spreading, after indenting the cookies, use your fingers to reshape into a thicker disc (since indenting the balls flattened them out).
  6. Bake for 11–12 minutes or until the edges appear set and are very lightly browned. The centers will still look very soft.
  7. Allow cookies to cool on the baking sheet for 5 minutes. After 5 minutes, transfer to a wire rack to cool completely.
  8. Cookies stay fresh covered at room temperature for up to 1 week.

Notes

Chilling the cookie dough is a key culinary technique that ensures the cookies maintain their thick shape during baking. This allows the fats in the butter and peanut butter to solidify, leading to a chewy center and perfectly set edges, creating that delightful contrast in texture that makes these cookies irresistible.
